Chicken Thighs with Orange Sauce

I love cooking (and eating) chicken thighs. Bone in. They have so much more flavor than breast meat. And while white meat has a place, I’s rather serve chicken legs and thighs. But I often find myself falling into a rut on how to prepare them differently.

Today I spied a small jar of orange marmalade in the pantry. I had made a large batch as gifts for holidays, even though it’s not something I would normally eat. It was just a small jar, but I figured it was enough to make a sauce with.

To the marmalade I added a bit of orange juice, small salt and Worcestershire sauce. Over low heat, melt it until the marmalade mixes with everything else.

It turned out to be a great sauce, especially once it blended with the pan juices from the chicken.

Orange marmalade makes a spicy sweet sauce over juciy chicken thighs.  Serve with a salad and smashed potatoes for a complete meal.

Ingredients

Thigh prep

  • 6 each bone in chicken thighs
  • 1/4` cup flour
  • salt and pepper to taste
  • 1/4 cup olive oil or vegetable oil

Orange sauce

  • 1/2 cup orange marmalade homemade or jarred
  • 1/4 cup orange juice
  • 1/2 tsp salt
  • 2 tsp worstershire sauce

Instructions

  1. Season the chicken with salt and pepper, then roll in the flour.  Saute in the oil in a large oven proof pan.  Place skin side down, and then turn once golden brown.

  2. Bake at 350F for about 45 minutes until cooked through.

  3. While the chicken bakes, make the sauce.  Mix all ingredients in a saucepan, and stir over low heat until the marmalade has melted and everything mixes together.

  4. Remove the chicken from the oven and pour over the marmalade mix.  Leave any juices in the pan.  Try to get large pieces of the orange bits on top of the chicken.

    Return to the oven for another 15 minutes.  The sauce will thicken.
