Orange marmalade makes a spicy sweet sauce over juciy chicken thighs. Serve with a salad and smashed potatoes for a complete meal.
Season the chicken with salt and pepper, then roll in the flour. Saute in the oil in a large oven proof pan. Place skin side down, and then turn once golden brown.
Bake at 350F for about 45 minutes until cooked through.
While the chicken bakes, make the sauce. Mix all ingredients in a saucepan, and stir over low heat until the marmalade has melted and everything mixes together.
Remove the chicken from the oven and pour over the marmalade mix. Leave any juices in the pan. Try to get large pieces of the orange bits on top of the chicken.
Return to the oven for another 15 minutes. The sauce will thicken.
