Making Homemade Baking Mix

I buy very little box mixes of anything. I prefer making my my own goods from scratch , like this homemade baking mix. Use it instead of boxed baking mix, which is a whole more expensive and full of preservatives and chemicals.

Common Pantry Items make Homemade Baking Mix

I bet you have everything in your pantry to make baking mix already. I use part white whole wheat flour in an attempt to make it slightly more healthy, but feel free to use just all purpose flour. And like my pie crust, where I use half lard, and half butter, for the mix I use half shortening, and half lard to make a batch of mix. You could also use solid coconut oil in place of the lard or shortening.

Use this homemade mix anywhere you would use the box mix – like for biscuits or dumplings (sneak previewnext week is homemade chicken and dumplings, using my mix!), pancakes, waffles, muffins, and more. The internet as well as small baking books located by the check out counter are proliferated with baking ideas using a baking mix.

Taking time to mix up a batch, which really only takes a few minutes, can save you time at dinner time. Most of the time you will be using a homemade mix as the base, and adding a few other ingredients like herbs, spices, and some water or milk to create the desired baking item. My recipe makes a big batch, so I store about half in my pantry cupboard in an airtight container ( I use a lot of Oxo Pop Top containers) and half in the freezer in a zip lock bag. It keeps about 3 weeks on the shelf, 6 months in the freezer.

Creating the mix is easy, less than 10 minutes, and less than that with a food processor. Really, clean up takes longer! Mix up the dry ingredients, then cut in the fats. A pastry cutter will do it by hand, but I prefer a food processor to mix it evenly and make the fats cut in finely. I do it in the two batches, then mix some of each batch into my container or freezer bag. The freezer is the best way to keep the mix made with whole wheat flour, since it can go rancid quickly compared to all purpose flour.

Homemade Baking MIx

A copy cat version of store bought baking mix, but made with simple pantry ingredients!

Ingredients

  • 3 cups white whole wheat flour
  • 6 cups all purpose flour
  • 1 cup dry milk
  • 5 tbsp baking powder
  • 2 tsp baking soda
  • 1/4 cup granulated sugar
  • 1 tbsp salt
  • 1/2 cup lard
  • 1/2 cup shortening Butter shortening adds a pleasant flavor; coconut oil a different flavor

Instructions

  1. Mix all dry ingredients in a large bowl.

  2. Divide in half to 2 bowls

  3. Mix one bowl with lard, the other with the shortening. Mixing can be done by hand with a pastry cutter, or with a food processor.

  4. Store in air tight container or in the freezer.
