Making a Quick Ravioli Casserole

Need a quick dinner, and you have a bag or two of ravioli in the freezer?  Make a casserole!

Just cook the ravioli according to the directions, and drain well. Pour into a large cast iron skillet ot casserole dish.

Season with salt and pepper. Cover with as much or as little pasta sauce as you like.  I put just enough to cover it and prevent drying out, but not swimmingly so.  Cover with mozzarella.  I prefer fresh slices, but grated would be perfect as well.  Fresh cheese will melt and taste better than the pre-packaged, pre-grated kind.

Pop into the oven for 25-30 minutes until the sauce is hot and bubbly, and the cheese is all melted.  If you like, sprinkle with some chopped herbs, like parsley, chives or basil.

It won’t last long, especially with a loaf of crusty bread.
