How to make Apple Fritters

Advertisements

Homemade apple fritters are so good – even better than those from a doughnut chain. Made with basic ingredients and 3 apples chopped up, the only real requirement is a heavy deep pan for frying them. Okay, so maybe not so heart healthy, but they are just a treat! The easiest thing is to place them immediately on a baking rack in a sheet pan (with parchment paper underneath to make clean up a breeze) to drain, then put them back on it after glazing.

Place fritters on a rack to drain after frying, and again after dipping in the glaze

As my husband said after the first bite, a good fireman’s dinner dessert for the monthly meeting! Maybe my pies will be out, and fritters in! The recipe makes about 12 fritters, and can easily be double or tripled for more.

I used self rising flour, because I happen to have a lot on hand. It can be used in place of regular flour – any salt is left out, and because it contains baking soda already, any baking soda can be left out or other leavening reduced. If you want to use 1 cup plain flour, add 2 tsp baking powder and 1/2 tsp salt.

Ingredients

Fritter batter

  • 1 cup self-rising flour
  • 1 tsp baking powder
  • 1.5 tbsp sugar
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • 1 egg beaten
  • 2/3 cup milk
  • 1 ½ cups apples – about 3 medium peeled and diced
  • Vegetable Oil for frying

Glaze

  • 1 1/5 cups confectioners/powdered sugar
  • 1 tsp vanilla extract
  • 2-3 tbsp milk

Instructions

Fritters

  1. Heat oil in a deep skillet, like a cast iron chicken fryer.

  2. Mix together all the dry ingredients in a bowl – a whisk works well.
  3. Combine egg and milk together and whisk, then stir into the dry ingredients.
  4. Stir in the apples to combine.
  5. When the oil is about 325F, drop by the spoonful into the hot oil. I cook 4 at a time. Once one side is browned, flip over to cook the other side, about 2 minutes per side. Cool slightly.
  6. Place on a cookie sheet lined with parchment paper (for easy clean up) and a wire rack.

Glaze

  1. Mix all the glaze ingredients together, using a bit more milk if too thick, or adding more sugar is it's too thin. Using a set of tongs, dip each fritter in the glaze, flip to coat the other side, and then back onto the wire rack for the glaze to harden.

Recipe Notes

Makes twelve fritters. Great with coffee, vanilla ice cream or on their own!
