Ingredients

Fritter batter

  • 1 cup self-rising flour
  • 1 tsp baking powder
  • 1.5 tbsp sugar
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • 1 egg beaten
  • 2/3 cup milk
  • 1 ½ cups apples – about 3 medium peeled and diced
  • Vegetable Oil for frying

Glaze

  • 1 1/5 cups confectioners/powdered sugar
  • 1 tsp vanilla extract
  • 2-3 tbsp milk

Instructions

Fritters

  1. Heat oil in a deep skillet, like a cast iron chicken fryer.

  2. Mix together all the dry ingredients in a bowl – a whisk works well.
  3. Combine egg and milk together and whisk, then stir into the dry ingredients.
  4. Stir in the apples to combine.
  5. When the oil is about 325F, drop by the spoonful into the hot oil. I cook 4 at a time. Once one side is browned, flip over to cook the other side, about 2 minutes per side. Cool slightly.
  6. Place on a cookie sheet lined with parchment paper (for easy clean up) and a wire rack.

Glaze

  1. Mix all the glaze ingredients together, using a bit more milk if too thick, or adding more sugar is it's too thin. Using a set of tongs, dip each fritter in the glaze, flip to coat the other side, and then back onto the wire rack for the glaze to harden.

Recipe Notes

Makes twelve fritters. Great with coffee, vanilla ice cream or on their own!
