How to Make an Eggroll Dessert

Honey Apple Egg Rolls….I’ve made these for years and years. Almost 40 years in fact. I can’t even remember where I found the recipe or maybe the inspiration for the recipe. They look hard, but are so easy. And make an unusual handheld dessert which are great for after an Asian meal, for a picnic, or evening snack. We eat leftovers as a breakfast pastry.

The egg roll wrappers are probably the only special thing you need to buy. I bet you have the rest of the ingredients (or something you could substitute and make it work) in your pantry.

These sweet egg rolls are flavored with honey, raisins, apricot preserves (or orange or apple jelly) and some warm spices.

First step, peel and core apples, and thinly slice. Melt some butter in a large saucepan, and add the apples, raisins, and spices. Saute until tender – about 5 minutes if sliced thin.

then add in some fruit juice (I used apple cider today) and the jelly/preserves. Toss around and let cool. Isn’t that easy?

Once cool, the filling is rolled up egg roll style. Place the wrapper in front of you to look like a triangle.

Put a spoonful of filling across the wrapper in the middle. Wet the wrapper with a little water to make the edges stick and seal; Fold the bottom point up, then fold in the sides, and roll up.

These do have to be fried to get the crispy egg roll (I didn’t say they were healthy!). But in only a quarter inch of oil. I only fry 2 at a time; the wrappers fry really quick. The oil should be hot enough to bubble immediately when the “egg roll” is place in the pan. Drain on a paper towel, and enjoy!

A word of caution, the filling is REALLY hot immediately after frying, so give them a minute to cool down, or risk a burned roof of your mouth.

Ingredients

  • 3 apples
  • 1/4 cup raisins
  • 2-3 tbsp oil
  • 3 tbsp preserves or jelly apricot, apple, orange marmalade
  • 3 tbsp honey
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 tbsp butter
  • 1pkg egg roll wrappers

Instructions

  1. Peel, core, and thinly slice apples.
  2. Melt butter in a large saucepan over medium heat.  Add apples, raisins, and spices.  Sauté until apples are tender but not too soft (4-5 minutes)
  3. Add fruit juice and preserves/jelly.  Stir fry until apples are well coated.  If the filling is too watery, cook a bit longer or add a cornstarch slurry to thicken it.  Cool filling.
  4. Organize workspace with wrappers and a small bowl of water.  Lay a wrapper down to look like a triangle, with one corner towards you.  Put about 2 tbsp of filling in the middle of a wrapper, fold up the bottom point, then the sides, and roll up snugly.

  5. Use ¼ cup oil, to about a depth of 1/4 “ and heat until bubbly.  Fry wraps on each side until golden brown on all sides.  Drain and paper towel.
  6. Serve hot, or cold as a pastry.
