Making mayonnaise may seem daunting, but it’s really easy! With a food processor (or a blender) you can whip up thick creamy fresh mayo that tastes better than any store bought jar. Once I made it in my own kitchen I stopped buying it at the store.
Mayo is simple ingredients, things you probably already have in your kitchen.
Mayonnaise is basically eggs and oil, and some lemon juice, and a bit of spice. I add a small amount of salt, and I like to use a mix of olive oil and vegetable oil. I find it becomes too strong for me with all olive oil, but feel free to try different oils and find a combination that suits your tastes. Surprisingly, a little chili powder or paprika adds a punch to the flavor – I prefer anything smoked.
Homemade mayonnaise will not be the same pudding like consistency as jarred store-bought. It’s creamier than that with stabilizers and preservatives.
My recipe will make about 1 quart, perfect to fill a quart mason jar. It will keep refrigerated for about 3 weeks – and during summer we go through it in no time!
Quick and easy Food Processor Mayonnaise
Fresh homemade Mayonnaise tastes so much better than store bought stuff. With a creamy texture and a bit of tang, this is the real stuff. And no preservatives!
Based on the blender mayonnaise in The Joy of Cooking, I find using a food processor is easier to both pour in the oil, and for cleanup.
Ingredients
- 2 eggs room temperature
- 2 tsp dry mustard
- 2 tsp salt
- 1 large dash smoked chili powder or smoked paprika
- 2 tsp sugar
- 1/2 cup olive oil
- 1 cup vegetable oil
- 6 tbsp fresh lemon juice (2 lemons)
- 1 cup vegetable oil
Instructions

add all ingredients up through the olive oil to a food processor and whir until smooth and well blended.

With the processor running, slowly, in a thin stream, add 1 cup of oil. Process until smooth.

Keep the machine running and add the lemon juice

Very slowly, in drips or a very thin stream, add the final cup of oil, and proces until smooth. If oil clings to the side of the bowl, stop and scrape down the sides and process a couple pulsees.
Recipe Notes
Makes approximately 1 quart of mayo. Keep refrigerated.
Can also be made in a blender by taking the plug out of the top and letting the oil drizzle in with the machine running.
