Quick and easy Food Processor Mayonnaise

Fresh homemade Mayonnaise tastes so much better than store bought stuff. With a creamy texture and a bit of tang, this is the real stuff. And no preservatives!

Based on the blender mayonnaise in The Joy of Cooking, I find using a food processor is easier to both pour in the oil, and for cleanup.

Ingredients

  • 2 eggs room temperature
  • 2 tsp dry mustard
  • 2 tsp salt
  • 1 large dash smoked chili powder or smoked paprika
  • 2 tsp sugar
  • 1/2 cup olive oil
  • 1 cup vegetable oil
  • 6 tbsp fresh lemon juice (2 lemons)
  • 1 cup vegetable oil

Instructions

  1. add all ingredients up through the olive oil to a food processor and whir until smooth and well blended.

  2. With the processor running, slowly, in a thin stream, add 1 cup of oil.  Process until smooth.

  3. Keep the machine running and add the lemon juice

  4. Very slowly, in drips or a very thin stream, add the final cup of oil, and proces until smooth.  If oil clings to the side of the bowl, stop and scrape down the sides and process a couple pulsees.

Recipe Notes

Makes approximately 1 quart of mayo.  Keep refrigerated.

Can also be made in a blender by taking the plug out of the top and letting the oil drizzle in with the machine running.
