I’m sharing another of my beloved bread recipes today. This can actually be considered good for you, with healthy ingredients like old fashioned oats, and (homemade) applesauce, and cinnamon; all of which have health benefits.
It keeps well for a few days when wrapped up well, if the loaf lasts that long. It’s a bit crumbling to put in a toaster, and so I like it sliced and slathered with some butter or cream cheese for breakfast.
Oatmeal Applesauce bread
Beat together:
1 c applesauce – homemade or store bought
1/3 c brown sugar
2 eggs
Sift in:
1.5 c flour – I use white whole wheat flour like this one
1 tsp baking powder
1 tsp. baking soda
1.5 tsp salt
1 tsp cinnamon
.5 tsp nutmeg
Mix roughly, then stir in:
1/3 c melted shortening
1.5 c rolled oats (the old fashioned kind, I buy Bob’s Old Fashioned Rolled Oats)
1 c raisins
Spoon into a well-greased loaf pan.
Bake 350 degrees for 55-60 minutes.
I make this all in one bowl, sometimes using a whisk to get started and then a wooden spoon, but also sometimes with a hand mixer. It doesn’t really matter. You can swap it up a little too – use dried cranberries or cherries instead of raisins; perhaps oat flour instead of whole wheat flour.
