We could never eat everything I bake. So I bake for friends as gifts, as thank you’s, and just because. Also because neither my husband or I should be eating much sugar or white flour (though I often do cook with white whole wheat or spelt flour instead).
I like giving away food so someone else can enjoy it.
One of my neighbors continually helps us out, and he loves fruit based desserts. So for this week, an apple pandowdy just for him.
Apple Pandowdy
An old timey apple dessert, pandowdy is similar to a slump or cobbler. Fruit on the bottom covered with a lusciuos caramel sauce and biscuit on top - what can be better? A La mode!
Ingredients
- 4 cups sliced apples 4-5 medium
- 3/4 cup brown sugar
- 1 1/4 cup flour
- 1 tsp cinnamon
- 1/2 tsp nutmeg plus more for grating or sprinkling
- 3/4 tsp salt
- 1 cup water
- 6 tbsp butter
- 1 tbsp lemon juice
- 2 tsp baking powder
- 2/3 cup milk, or milk and sour cream/yogurt/cream cheese
Instructions

Arrange apple slices in a greased baking dish, shallow, about 2" in height.

In a small saucepan, mix together the brown sugar, 1/4 c of flour, the spices and 1/4 tsp of the salt. Stir in the water. Place over low heat and cook, stirring, until thickened. Once thick and bubbling, stir in 2 tbsp of the butter, & the lemon juice.

Pour over the apples.

In a large bowl, stir together the rest of the flour, salt and baking powder. Cut in the remaining butter with a pastry blender, two forks or with your fingers., until the butter particles are small. Use a fork to stir in the milk or milk mixed with sour cream/yogurt/cream cheese. Stir to make a soft dough.

Drop by large tablespoons onto the fruit. Make each "biscuit" as large or as small as you like, but no less than 8 biscuits. I like to grated fresh nutmeg over the top at this point.

Bake at 375*F for about 40 minutes or until the biscuits are lightly browned. Can be served warm or cooled, and is excellent with ice cream!
